The computer will be mostly used for gaming but will be used for some UDK/Rendering and compiling programs.

If he's going for triple monitor support, AMD cards will be able to do that on a single card, scale better if you were going to get two anyway and tend to work better with larger resolutions.
He thinks that "he will have to fuck around with drivers and the drivers will fuck up" Is that true I don't think so but thats just my opinion?

Occasionally, but they should improve from what they promised with the "GCN" release.
Is the "GCN" release the 7k series?

Graphics core next, basically yes, but it's part of their whole new plan to up their game for good.
Better driver development, working with game developers directly and what not, so = better drivers from day 0 release.
