Yes, Unetbootin is great for turning a LiveCD into a LiveUSB, but it's not a persistent install. That requires another method of installation, and can prove to be rather difficult in comparison. When making a LiveUSB, I take my 2GB drive and partition the first 710MB as FAT32 where Linux Mint 7 is installed, and format the remaining 1.2GB as Ext3. This way I can boot into Linux, and I still have a 1.2GB partition to save my downloads, settings, etc. Looks something like this in Gparted: [||| 710M |||] - [||||||||||| 1.2GB |||||||||||] Hope this helps.
It's not that hard if you're using Ubuntu, install usb-creator and give it a Ubuntu iso, there is a slider which lets you select how much space on the drive you want to reserve for persistent storage.

Yey, I used Wubi. I didn't have any problems with it. The only downside is that you can't access Ubuntu's files from Windows and vice versa.
yeah well i just tried utbuntu 64bit. i get a windows error so i guess i try a partition my hhd.
You can also use fedora's live usb creator which allows you to save your changes and documents on your usb on the fly. Thats what I am using at this very moment! Ubuntu was a pain for me to get working on my usb but fedora was so easy just a few clicks and boom i have linux on my usb. usbuntu is a really good tool also, i used that on my usb because it lets me save changes and such so i don't have to reinstall flash every time i use it
