What's a light and healthy snack to have before or after dinner?

I often do afternoon shifts at work, sometimes I do shifts finishing at 8 or 9PM, sometimes I do shifts finishing as late as midnight. I usually have dinner after I finish work, but after having lunch at midday I end up very hungry when it's time to sign off. Sometimes I'll have leftovers of previous dinners waiting for me in the fridge at home to heat up, but many times I have to cook dinner (I live by myself so there's no one else to do it for me) which can often take from half an hour to an hour to do. One time I was so stupid that after finishing a shift at midnight I had stayed up until 3AM to cook a roast dinner haha.
But yeah anyways what I did last night after finishing at 8PM was I bought a large bag of doritos and dip (my gut took over my head as soon as I finished work) and I ate the lot before dinner (crumbed squid and chips in the oven) was even done. Because I'm trying to manage my diet (and I've been doing quite well so far), I'm just wondering if anyone has any ideas on light snacks to eat while waiting for dinner to be ready, or even afterwards if dinner just wasn't enough? I already have a piece of fruit and a small tub of yoghurt as part of lunch, but would appreciate some variety instead of having either of those again around dinner time.
What does a crumbled squid look like?
Can't go wrong with assorted vegetables.
A few whole wheat crackers and some humus, maybe?

I think some healthy chocolates that are made of dry fruits can be a good option as it will be light and good for health.

A fruit of your choice. Apples, peaches, or (pre-peeled) oranges would be my picks.
Saltine crackers and a small bottle of water. It's a good, simple way to sort of cleanse your system while still getting necessary nutrients into your body. It's why most people prefer saltines and water when they're recovering from a stomach bug.

Nuts, dried fruit, baby carrots/celery/broccoli/cauliflower with or without ranch dressing.
Air-popped popcorn is supposedly good for you, too. Just don't overdo it with the toppings.
Oatmeal with peanut butter and banana. Delicious and pretty high in protein. Even higher if you make the oatmeal with milk instead of water. You can also add in a scoop of protein powder if you wish.
3 whole orphans.
Granola bars aren't too bad.

I personally love Clif Bars. They come in a large variety of flavors, try one out?
Blend some clif bars together with pancake mix, make clif bar pancakes.
Beef jerky's always good.

I don't think those would go too well before dinner. They're pretty filling.
