Welp I decided that I should update my drivers finally since I had been having a few issues.
So I downloaded and installed the latest Catalyst drivers or whatever for my ATI Mobility Radeon 5870 but then it just gives me a BSOD and restarts looking funky and the device manager says it doesn't recognize it.
Here's some specs

From searching online, I heard people talking about updating vbios or bios or something as well as something called Driver Sweeper mentioned.
I'm not that computer savvy so it doesn't really help me.
Just don't update them, updating the drivers won't make much difference unless your experiencing problems with the GPU.

No, you should always keep your GPU drivers up to date - they usually come with benefits, even if you don't need them.
To the OP, try uninstalling your previous video card drivers first. Also you say it's a Mobility Radeon, are you sure your laptops manufacturer isn't one that restricts anything other than the drivers designed by themselves being put on the laptop? I know some Dell laptops do it.

I tried uninstalling the previous version and it should allow me just fine.
From what I've read from searching I should update the vbios but also heard if I do it wrong then I could brick the laptop.
So I'm kind of afraid to do that.
