Ultimate Ramen Tips & Tricks Guide V1: Playing With Your Mum's Spices
92 replies, posted
Hey kids! Do you like good tasty ramen? Do you have to put up with cheap shitty (in comparison to the real deal) store bought stuff? I'm hear to show you how to make your ramen classy (Okay, maybe not classy) and delicious!
There are a few things you can do with ramen that fall into these two categories:
Spices/Sauces, and Additives.
Combine and experiment to make truly unique dishes that appeal to your taste.

Spices/Sauces:
Sea Salt:
Adds a nice little extra salty kick to your ramen than regular salt. This is surprisingly effective.
Chives:
In addition to making it look pretty, it makes your broth a little stronger IMO.
Onions:
I'm not a big fan of these, but it dose taste good to have a little bitter taste every so often.
Soy Sauce:
Fucking delicious salty goodness.
Milk:
Nice and creamy. (totally not stolen from FPKawaii's post)
Sesame Seeds:
Adds a little crunch to your noodles and gives a nice texture to the broth.
Bay Leaves:
Adds a distinctive taste to your noodles if you add it in before the noodles.
I always use this stuff when I'm sick 'cause I can taste it with a stuffy nose. Also works great for spicy ramen that drowns out other flavors.

Just put a little Sesame Seed Oil in. too much will make the broth taste funky. Also, don't limit it to just Ramen if you like it. This stuff makes for a pretty rockin' stir fry too.

I love adding Garlic and Onion to my Ramen, a little bit of Old Bay is good (a little spicy)

I was always a fan of just mixing some Sriracha in with the noodles.
Then again i usually drain of almost all of the water, so using the Sriracha and the bit of water i make an almost spicey paste to go on the noodles.
^Not sure how I didn't think of this

Additives:

Mushrooms:
They taste fucking awesome in actual ramen.
Eggs:
I stole this from an egg drop soup recipe. Just take an egg, crack it into a cup, and mix it up thoroughly. After you throw in the noodles for cooking, pour in the desired amount slowly through a fork/strainer and move it around the pot. It solidifies upon contact with the boiling water and tastes great.
Extra Broth:
If you're like me, you love broth as much as the noodles, but like to have a little something extra. Instead of using more water that dilutes the taste, just get beef/chicken/whatever-flavor-of-ramen-you're-using stock, and add it in a little before turning off the heat.
Misc. Vegetables:
Go ahead and experiment to find what tastes best to you. Personally, I think a little spinach taste great.
I take normal ramen and put potatoes in there. I don't know why but it always tastes good.
Go out there and experiment, and report back on how it tastes. If you like it, I'll add it to the OP.
HOLY SHIT GUYS
I think I discovered the best way to cook ramen.
What you'll need:
*- Ramen. (durr) I used the beef variety but I imagine it'll work with other kinds as well.
*- An egg.
*- Basil. Don't go with the preground stuff, go straight for the leafy kind - but you only need one leaf.
What you don't NEED but probably want:
*- Cheese, block style
1. Break apart the noodles into four chunks.
2. Start your water boiling.
3. While that's going, chop up some basil.
4. If the water's still not boiling when you chop up your basil, then get your cheese slicer, dial it up to the thickest setting and slice yourself some cheese as a snack. Put the cheese away now.
5. When the water boils, drop your noodles in. Poke them with your fork so you make sure all the noodles get enough water. Set your timer for three minutes.
6. After the first minute, throw your basil in (and stir a little) and start scrambling your egg. For health reasons, I choose to do this in a separate bowl with a separate fork.
7. After the second minute, pour your egg in. CONSTANTLY STIR AT THIS POINT, and scrape the bottom of the pan too, or you'll get a whole lot of egg stuck to the bottom.
8. After the third minute, kill the heat. Throw in your seasoning packet and serve. If there's still a little egg stuck to the bottom of the pan, it's OK - better a little than a lot in this case.

Sort of a necro but this is still on the first page, I combined Beef Ramen with some Parmesan cheese.

Sadly I don't know many decent brands of ramen-ish stuff in New Zealand. :(
Still, when I think of ways to improve my noodles, I end up going so far I begin to wonder why the hell I'm still using cheap instant noodles as a base.
you can so many things in ramen like bacon

Man I haven't had ramen in ages. It's odd how you can complain about having to eat something in one part of your life, but then you miss it.

EDIT: Also, Japanese market ramen is complete shit, don't even try it. Maruchan is 10x better.
I threw a little hot sauce into ramen once. It was alright.
A month later, I threw in a little bit of a different hot sauce (not knowing it was Buffalo Wing sauce at the time). Wasn't a fan.

Seasoned salt is pretty good with Chicken flavored, I also use a small amount of spray butter.
I love adding Garlic and Onion to my Ramen, a little bit of Old Bay is good (a little spicy)

What is Old Bay? I apparently bought some a while ago but never used it.
Dont use Mrs.Dash, I learned that the hard way.
I was always a fan of just mixing some Sriracha in with the noodles.
Then again i usually drain of almost all of the water, so using the Sriracha and the bit of water i make an almost spicey paste to go on the noodles.
I used to cook the noodles in plain water, drain them, grate cheese over it while it was still hot, and then mix in the powder pack (normally chicken). It was pretty good, but really salty too. No broth though ):
My mom always added egg to hers and I thought it was weird, I guess it's normal though.
I haven't had ramen in two or three years though.
I just made a bowl of chicken flavor ramen, with an egg in it for the first time. It's pretty fantastic, i also added some garlic and onion powder.
Garlic powder, onion, and some spam make it damn delicious.
Add Soy Sauce, Jell-O, Hot Sauce, Mayo, Mustard and some Pickle Juice to Chicken Flavor.
Some good eats.
I have been eating ramen for years and never knew they made a ramen thread!

I don't think there is a hard way in learning with ramen.. It's 17 cents; who gives a fuck.

GEWWWW.
Ramen + cheese + tortilla =ramen burrito= delicious. You don't get to enjoy the broth, but the texture is amazing.
So me and my nephew were feening for something to eat and there was nothing but sausage in the fridge, and we had 2 packs of ramen. He says "I need to use your computer," finds the thread, and we throw everything we possibly can into a large pot of steaming noodles and it was god tier. So thanks.
Sort of a necro but this is still on the first page, I combined Beef Ramen with some Parmesan cheese.
Was very nice.
I usually cook the noodles, throw in some soy sauce, some beef, onions, and some seasoning. Good stuff.
Cayenne Ground Pepper + Shrimp Ramen = Yum.
Just a pinch, though.
I combine Chicken Ramen with some beef bullion. Tastes pretty good mixing them.
