You can still make a local profile can't you?
Launch game, when GFWL asks you to sign in, go create new profile, don't hit next, scroll down instead, click "create local profile", put in name, enjoy saving your game with none of the extras like achievements and co-op.

I didn't know you could do that. All I've been doing is re-creating the same account over and over because the stupid update feature never worked.
