I fucking hate how the Windows gun emoji is a laser pistol while everyone else has either a revolver or semi-auto pistol of some sort. I feel like they should just go with what everyone else is doing for consistency. I've seen some questionable emoji designs but that's the only flat-out ignoring the source material I've seen.

Emoji existed way, waaayy before these apps exposed Unicode versions of them. Japanese phones used them for years. It's only since 2010 that we've had proper support for them in the west thanks to the Unicode Consortium. And it was a few more years after that that OS makers actually started to expose more of unicode to us plebian users.
Those apps weren't really doing anything special other than mapping emoji to their own bespoke thing or exposing the unicode versions if they were supported. Blame Apple for this, exposing the Emjoi keyboard in iOS 2 or something has doomed us all.

The idea of Unicode is to have a standard encoding format for every character from as many languages as possible. Emoji is taking that concept and applying it to symbols and every [I]identifiable[/I] object with the philosophy of language without words. Honestly a rifle makes sense, but Unicode Consortium must have a good reason for turning the idea down.
