Jet Set Radio Future is a must grab, it's a good step up from JSR and is only exclusive to xbox.
Farcry Instincts: Evolution had a good map builder and it could be good fun for multiplayer if you can find people to play with you.
And last but not least Gauntlet: Dark legacy can be good fun with some friends or by yourself.
TimeSplitters 2 and TS: Future Perfect
be mindful the first game has the odd springy aiming of GoldenEye so it might feel weird to you
Crazy Taxi 3 is pretty great.
Armed and Dangerous is a fun third person shooter.
Black is neat too. It's the FPS where everything explodes.
Blinx: The Time Sweeper and Blinx 2 were pretty popular back in the day. I only ever played the demo for the first game but if you're into platformers it might interest you.
Voodoo Vince, a platformer where you have to hurt yourself to solve puzzles, because you're a voodoo doll.
Conflict Desert Storm and Conflict Desert Storm II: Back to Baghdad, they're pretty clunky third person shooters by today's standards but they're focused pretty heavily on realism and require a fair bit of planning.
Fable: The Lost Chapters, it's also on PC but I'm just listing good Xbox games here.
Far Cry Instincts and the sequel Far Cry Instincts: Evolution (or if you have a 360 you can get Far Cry Instincts: Predator, which has both Instincts games and looks and runs better)
Fatal Frame and Fatal Frame 2, if you want a Japanese horror game where you fight off ghosts by taking pictures of them.
Full Spectrum Warrior and Full Spectrum Warrior: Ten Hammers, a quasi shooter where you command a squad of soldiers and direct their attacks from third person. A very unique game worth checking out, even if just to see how different it is.
GTA 3 and Vice City, they're the same as San Andreas. By which I mean they're the same game as on the PS2, but they look significantly better.
Half Life 2, if only just to see the changes, like how they stripped out most of the airboat section.
Halo and Halo 2, fantastic games that I highly recommend.
Harry Potter and the Chamber of Secrets. A legitimately fantastic Harry Potter game with a nearly full recreation of Hogwarts. Much better than the Gears of Potter games that came out for the last couple of films.
Hitman Contracts. It's better than Hitman 2, and Blood Money should be played on a 360 or better.
Jade Empire. A lot of people love this game as it's quite different to other Bioware RPGs, I could never get into it.

Medal of Honor: Frontline, A game from back when Medal of Honor was good. And still a thing.
Medal of Honor: Rising Sun. Not the best MoH, basically the Xbox's version of Pacific Assault, but with a very different campaign.
Mercenaries: Playground of Destruction. An open world action game which embraces the open world concept in everything it does.
Ninja Gaiden Black. It's Ninja Gaiden, but it's an improvement in every way. Plus the name is cooler.
Oddworld: Munch's Oddysee. It's Oddworld. It's 3D. It's not as good as the other games but the story is still fun.
Phantom Crash. It's fast paced mech fighting for fame and profit. Only 2 games have ever come close to it, the PS2 exclusive sequel Steel Lancer Arena International (or SLAI for short), and Hawken, but Hawken stripped out all the things that made it cool to try to attract a bigger crowd, so it sucks now.
The Simpsons: Road Rage. It's Crazy Taxi, but the Simpsons. If you don't like the Simpsons you can ignore it.
The Simpsons: Hit & Run. It's GTA, but the Simpsons. If you don't like the Simpsons you can ignore it.
Sonic Heroes. People give it a lot of shit but I thought it was cool. I was 13 at the time though.
Spiderman and Spiderman 2. Spiderman is a cool action/brawler game based on the first film, and Spiderman 2 is fucking legendary.
The Urbz: Sims in the City. It's kin of like The Sims, but kind of not. I liked it and the art style is cool.
The Sims. The Xbox version of the Sims is very restricted compared to the PC version, but it also kind of has a story you can follow as you move from house to house. I think it's pretty neat.
Van Helsing. It's a very odd action game where you play out the story of Van Helsing. You get extra points if you finish a level with your hat on.
XIII. A game where you play a spy with amnesia who's only notable mark is a tattoo of the number XIII. It has a comic book style turned up to 11, you can even [i]see[/i] the click clacking of enemies as they walk.

Also note: I haven't played an original Xbox game (beside Halo) in about 10 years, so how well any of these games have aged is unknown to me.

Juiced. A heaps underrated racing game that got shat on by its dreadful successor, Hot Import Nights.
Also Sega GT 2002 which is also really, really underrated. I miss that game so much
Star Wars: Starfighter. An interesting prequel-verse dogfighting sim-style game, with a decent variety of ships and some interesting side stories that tie into the prequel trilogy of movies.

Sticking with exclusives:
Panzer Dragoon Orta, a rail shooter with a great soundtrack, art style, and gameplay. Not very long, however. Also comes with the original Panzer Dragoon once you beat the game.
MechAssault 1 and 2 are pretty fun third person arcade mech games based on the MechWarrior/BattleTech franchise, though they are both geared mostly towards Xbox Live. Fairly short campaign in the first game. I haven't played the second though I put many hours into the first's campaign and survival mode, 'Grinder'
Breakdown is a neat firstperson fighting and shooting game. It's like Half-Life in that [I]everything[/I] is done in first person, including when your character hurls chunks in the tutorial. I never got very far with it, however.

Don't forget about [URL="https://www.teamxlink.co.uk/"]XLink Kai[/URL], though. If you can hook your Xbox up to your network, you can use XLink Kai to play games online using the Xbox's LAN features. It's still got a small community, mostly people who never stopped playing Halo 2. :v:
Other LAN tunneling things might work, too. You just gotta figure out how to set them up. I know I'd totally be down for playing a few rounds of Halo 2 with another human being.

You can't go wrong with the Doom 3 Collector's Edition. You get Doom 1,2, and 3. Doom 1&2 have splitscreen while Doom 3 has co-op/deathmatch with system link/Xlink Kai

Oddworld: Stranger's Wrath is pretty fun game
Area 51: One the few alien games thats interesting and has fun gameplay.
Area 51 was a pretty great and underrated gem of a game.
