Why is this even called romance? I never got why it's called "romance" in Mass Effect when it's basically just

Exactly, Alpha Protocol did it well by having a sense of jeopardy with each conversation and only allowing romantic encounters if you played your cards right (y'know, kinda like real life. not the jeopardy in each conversation part though unless you have an anxiety disorder). Also like real life you could be friends with people of the opposite sex without them inevitably falling on your dick after a set period of time. It's probably why I and no-one else found Tali a refreshing character in Mass Effect 1 because of the lack of romance, and why I and no-one else thought she lost something in ME2 when she became another different coloured receptacle for shepard's space-cock.

Pretty much this. Just use the "good" option in all dialogue with them and eventially you'll get to bone them. At least in the Witcher it actually IS a puzzle.
