This. It's almost exclusively used in Metal where playing notes below E3 is relatively common. Instead of having to down-tune your guitar several steps, you can just add an extra string instead.

To seriously answer the question, why not? I can play all my 6 string stuff on a 7 but I've got all these extra positions and options opened up by the 7th string, and when I feel like playing some death metal I don't have to downtune.
Not to mention, I simply think they feel nicer to play. I have pretty big hands and the neck just feels right. It's also similar in width to a 6 string classical guitar.

Try and take a seven string sweeping pattern and do it on a six string.

Whatever can be used to make more. A lot of people probably wouldn't utilize a 7 string too much, but there are some people that do.
12 string 4 lyfe.
To expand your range as a musician, 7 string can be/and are used in Jazz as well.
