They could have managed to squeeze past the symptoms, and maybe the doctors were just exhausted and had too many patients on their hands?

I'm not saying the doctors are to blame for being brain dead. Their brains are frying dealing with the dying.
So, they just jumped the gun at announcing death, and were wrong?
They most likely were in a comatose state and they misdiagnosed their...deaths.
Even if ebola could raise people from the dead, I'm pretty certain all your organs liquefying into ebolavirus probably doesn't do wonders for the motor system..
