His Password Was 12345

That would be like saying I hacked a facebook account because someone stayed logged in and i decided to post troll statuses.

The actual definition of hacking is gaining unauthorized access to someone's account or computer, so yes, this is technically hacking.

Weak password is security weakness like any other. You can use a dictionary attack, or you can guess it by hand.
It's still hacking, in the broad sense - just like getting onto an unsecured FTP who nobody thinks you could access without knowing the address. Hacking means bypassing security measures, no matter how badly implemented were they.
