Will a 3.06GHz dual core CPU bottleneck a 5870 2gb?
We need more info than that. A 3GHz Pentium D is very different from a 3GHz Core 2.

Your CPU shouldn't cause a bottleneck, but unless you plan on gaming with a massive high resolution screen then there's not much need for a 2 GB 5870.

Get the 5750 2GB, it'll be futureproof and eat Crysis at that resolution, that is all.
It really depends on the games you're playing, but there are more and more cpu hungry games appearing now that have good support for more than 2 cores. I think a good quadcore (i5 would probably be the best choice if you don't want to spend huge amounts of money for a cpu) would be better for a card as powerful as 5870.
