Volke cut his own throat while fleeing the officers, who later found his body in a wheelie bin in a nearby street, in the suburb of Teneriffe.
Police reportedly found a body part, believed to belong to Volke's Indonesian girlfriend, boiling in a pot in chemicals on a stove.
Other body parts reportedly from the alleged murder victim were found in garbage bags inside the apartment.
The chef's mother, Dorothy Volke, told News Corp from her home in Victoria that her son had returned to Australia only a few months ago after working aboard international cruise ships, where he had met his girlfriend, also a chef.
"They were starting to get settled," she was quoted as saying. "He was happy and he was coming home for Christmas, everything was normal."
Forensic officers have been examining both the apartment and the area where the man's body was discovered.
The alleged murder victim is yet to be formally identified.

Probably jealousy, a mental breakdown, or a psychiatric illness that might have gone undiagnosed. In any case even with diligent investigation we'll never know the real cause. I put my money on jealousy or an argument gone wrong.

dismemberment just seems like something you wouldn't do if you accidentally killed someone you cared about

Panic after commission of a crime, especially if it was done in a moment of passion, does not usually lend itself to a logical reaction. This includes attempts to dispose of evidence, which won't be done with the more calculated approach you'd expect from deliberate crimes.
What would boiling do in this situation? Would it just make the meat slide off the bones, or... I don't get it.

he was boiling it in a bath of chemicals. Logically, depending on what he was using, it would be enough to dissolve the soft parts completely, and degrade dental and skeletal evidence enough to make identification doubtful if not impossible. However, this only works out if the soft parts are dissolved completely, which ensures that DNA evidence would be difficult if not impossible to come by.
Not that I'm implying that this guy knew anything about it of course; for all we know he could have googled a means of disposing of the corpse or attempted to use something he'd heard about from somewhere else, without properly understanding how it was it worked.
I thought today's meal was a little off

Wow that's really fucked up. I'd hate to have the job of collecting all the parts of a dismembered, partially cooked body. At least this guy isn't on the run though.
