While someone like Arnold Schwarzenegger (in his prime) is clearly very strong, he'd be absolutely devastated in a real strongman competition. Because like the vast majority of other people perceived in popular media as strong, he built his body for aesthetics, not strength. Maui's body is an exaggerated version of that typical strongman look.
Some people can't be pleased no matter what you do. Best not try to cater to them.
It's not like every character in the movie has the same body type as this dude. This one Twitter pic a few posts ago shows that the MC's father looks fit, and the MC herself seems to have a normal body, so clearly it's not depicting Polynesians at large as being obese (if this could even be described as obese).
