So, whenever I launch a game and get to the menu my GPU immediately goes full blast on the fan and drops the signal to my monitors. My whole PC doesn't lock up though.
GPU: 2 GTX 780's
I tried swapping them around, tried reinstalling Windows and installing the latest drivers.
It's not a power issue because my PSU is 1k watts.
I am running dual 24 inch 1080p monitors, I don't know if this has anything to do with it but I thought it would be a good idea to add that in.
Can you try the single cards separately?

Which PSU do you have exactly? 1K Chinese watts can be 500W irl. While 1K German watts can be 1200W irl.

That should be an absolutely stellar PSU. With 2 independent power stages in it. This is great if you are running it full load, but not so great when it isnt, as both power stages need to be loaded for it work properly. http://www.hardwaresecrets.com/enermax-galaxy-1000-w-power-supply/
You can try to play around with the power connectors on a single card to see if it helps.
Do you have an onboard GPU so you can check its working s without a dedicated GPU drawing power?
