Colour depth issues with older games (specifically Jedi Outcast)

I'm experiencing a problem with Jedi Outcast, there is a huge problem with colour depth and I can't find a way to fix it.

I'm using windows 7. I have no idea why it says I'm using XP and explorer

Is this with the Steam version or something else?
Because I have the Steam version and Windows 7 and it plays perfectly.

It's on steam. It plays pretty well, the only problem is lack of colour depth which causes stuff to look dreadfully ugly and undetailed

It looks like it's in 16-bit color. Right click on the program and go to properties, go to the Compatibility tab and ensure that nothing is check boxed.
There is a specific in-game option for 16 or 32-bit color textures, maybe in the advanced graphics options.
It's there.
