everyone knows that it's also why greenlight is the way it is
Well you can't just release an app and magically have it sold. You need to push it, advertise it, and all that crap.
Apparently (not sure) that's how Rovio did it. They just kept on making games until one (Angry Birds) 'won the lotto'.
The problem is some of the best games go undiscovered. My favorite game of all time is Gravity Hook HD yet no one knows of it.

Your average iPhone user is only looking for games to keep them occupied, they're not going to pay any attention to what they're buying, and it ends up being just flukes that get popular, i.e. Angry Birds.
