So basically, I haven't upgraded in a year or two and I want to get ready for the massive wave of awesome games coming out during the end of this year/start of next year.
Currently I've got:
GA-M56S-S3 S-Series Gigabyte Mobo
AMD Athlon 64 X2 (Dual Core) 6000+
4GB RAM (although I am currently running 32-bit Win7; do I need to be running 64-bit?)
GIGABYTE ATI Radeon HD 5750 (1GB, GDDR5)
So I'm wondering what I should be looking to upgrade next. Budget isn't really a big deal (I could probably build a few fairly decent computers with the money available) but I tend to prefer staying away from the ultra-high end stuff because the newest stuff seems to halve in price after a few months.

Hey Farren, get a new motherboard, that should be on top of your list. Next, get a new processor. You should go with Intel if your going to do alot of gaming/editing/video work, etc. AMD if your just going to be gaming.
Your processor is a TERRIBLE bottleneck for your 5750, I had a 64 x2 4400+ @ 2.3GHz, which is somewhat similiar to yours, and I also had a 5770, the FPS was extremely terrible. I am on my new rig now (i5 2500k @ 3.3GHz), same old 5770 and I get TRIPLED the FPS, maybe quadrupled, and all my games are on the max settings (TF2,L4D2,Black Ops, GTA IV)
So my suggestion to you is to get a new mobo and CPU.
EDIT: Also, if your RAM is DDR2 and your getting a new mobo, don't forget to get DDR3 ram!

yup, pretty much it, 64bit is a plus, but you dont have to if you dont want to.

and no, 64 bit isn't a plus, it's superior in every way
If anything, you should probably upgrade your Motherboard and CPU, and you should also consider switching to a 64 bit OS to utilize all of your RAM.
If the budget isn't a problem, I'd recommend getting an MSI P67A-G43 and an i5 2500k, although this may require a PSU upgrade as well.

Couldn't find one of the PSUs you recommended being sold in Australia. I'm not a fan of $83 postage.
Also, any recommendations for a good case? Mine is seriously shit (the vent doesn't line up properly with the CPU fan for fuck's sake) and I feel like with all of this new stuff it'll end up overheating come summer (39 degree days aren't friendly to computers).

The most noticeable upgrades.
Hard Drive- Going from a 7200RPM to 10K RPM is a noticeable difference
Going from a spinning drive to a SSD is a very noticeable difference.
CPU- You may see a small difference in going from a Duel to a Quad but not much.
RAM- You won't see any difference going from 4GB to 6GB.
GPU- I have purchase dozens of GPUs and there really isn't that much of a noticeable difference.
Unless you are in to benchmarks, if that is the case then you will see you scores go up but, when it comes to gaming your best bet would be to get a higher clocked CPU.
I have always seen the most difference in my system when I upgrade my hard drive.

Arm is right, depending on the resolution of your of monitor an upgrade in GPU can effect your game play alot. HIgher resolution = moar power
