Scratch the 960. 950 instead.
Went with the 580. instead of 2 6870's, Total cost is now 2100.

Get a single GTX 580 so that you can get another and put it in SLI when you have the money.

I wasn't really planning on spending 1000 On GPU's, should I just wait for the 6950, or 6970? Probably equal to better performance for 300/400 dollars.

OK.
There's absolutely no point in getting the 960 when you can get the 950 and a high-end cooler to go with it for minimal overclocking that will give you the same performance. As others have said, just get a single 580 so that you can SLI it later; making a new build already with Crossfire/SLI usually isn't a smart idea since it gives you less upgrade options in the future.

I am totally calm. It's just that if you don't need an i7, don't buy an i7, since an i5 750 will cost you less and give equal performance. The mobo is cheaper too.

OK, But the i7 950 is only 100 more than an i5 750, and I'm trying to make this build last.
If you're just playing games, it won't help.
Buy a nice aftermarket cooler for the i5 750, and you're good to go overclock the bad boy. Besides, you'll save 100$ on the mobo, too.
