I have tried several screen recording programs. All of them fail to record programs that are in fullscreen mode such as Minecraft, Garry's Mod, Oblivion, (All the autistic games). I am using windows 7.

You need a program that actually hooks into directX or openGL to record exactly what the program's displaying. This requires that you start recording WHILE the game is running, instead of recording the desktop then opening the game.
The only recorder i know that does this on windows is FRAPS.

FRAPS works. However, it has small lag spikes at about 10 second intervals. What settings could I use to get rid of this? Not much of my computer's memory is being utilized.

Intel iCore i7 CPU 2.93 GHz

For FRAPS, decrease the amount of FPS used to record, change the recording setting to half size instead of full size, and if you can, save the recording onto a hard drive other than the hard drive which stores Windows
