Windows runs on an old kernel, is prone to malware, viruses, freezing and crashing, has a crappy command line interface. The only reason it's used is due to a monopoly by Microsoft. It doesn't obey standards and in general, is a piece of shit.

Just because Google employees started using doesn't mean Macs have suddenly gone into the mainstream.
But even if they did - and I do agree they would be targeted more - it wouldn't be as much of a problem for Macs since the OS itself has much tighter security. Mac OSs are more restrictive on the system itself, whereas Windows is quite open.

Do they leave a few people on Windows, like, for the Windows version of Chrome and stuff? If not, how would they code things like exes and stuff on Mac or Linux?

Umm... OS X's security is much better than Windows's. That isn't saying much though.
OS X is partially based on FreeBSD which is incredibly secure.

Well macs are quite expensive and using them temporarily would be a waste of money.

MinGW can act as a cross compiler for Linux to make Windows .exes. However, there isn't a good way to test Windows applications in Linux yet other than wine.

It's not like a company with probably thousands of computers in one branch alone will switch every single one to a new OS.

It isn't really. You can find lots of articles from individuals who say that Windows is more secure but at a higher risk of security lapses because of the sheer number of users. Example:

I imagine they'll go to Linux mainly, due to all the Google OS stuff.
