I'd like to get a finish like this on some plastic airsoft gun parts, but i'm not sure how since i don't know anything about treating or painting plastics.

Anyone got any suggestions?
Slightly heat up a file, then press it against the plastic? It's as low budget as I can think off. You better try it with non-airsoft parts first to make sure if it will work.
First two looks like brown paint dabbed on sorta. The handguard looks different however.
Looks like hydrographing, look it up you can get kits for it

I used to use a coarse metal screen [in my case security door metal sheeting with 3 mm holes in it] heated up with a propane torch and applied carefully to whatever I wanted to add grip to.

Just like that, yes. I just thought of the file immediately because the pattern on them resembles the mottled effect the OP described so much.
To clarify, i meant the flakey style/mottled finish the parts have, not the grip surfaces.
So hydrographing is what you want then.
