Are there bands/composers who do middle age themed music? With no or minimal singing and mostly instrumentals.

Lord of the Rings Soundtrack maybe?
Check out bands from the Folk and/or Pagan genres of Metal.
Ensiferum, Wintersun, and Finntroll are a few big names to start you with. Just remember, Youtube is your best friend for this situation.
Corvus Corax has singing, but give them a go. Van Gogh's idea is rather nice actually, check out some film and/or game soundtracks.
Fleet Foxes sounds like medieval music
Joanna Newsom. She does sing a lot though.
Summoning are an ambient black metal band with little singing, very symphonic instrumentals and based around lord of the rings. Despite being metal they are really calming. Fantastic to sleep to. And Dragonland are a power metal band which have great lyrics, in the album Battle over the Ivory Plains, the songs, if played in the right order, tell a story of men marching to war, them arriving, fighting a skirmish against orcs, only to meet another, larger army, where they are defeated by them, and their land destroyed.
It's awesome.
