I've actually never tried the head of any animal but I've always heard cheek meat is delicious, because of this video I'm going to try it the next time I get a chance.
Cheek is delicious. Almost all of the meat on the head is very delicate and tender and suprisingly not gross once you get past the idea of eating a head. If you're more hardcore you can eat the eyes (usually good on bread) and the brain, but these are for people who are well over the fact that it's taboo for their culture.
