[I]Where did Cooking Chums go?![/I] Well I decided it was time to do some baking in a cup stuff again. Everyone knows about the chocolate brownie (more like sponge cake) in a cup, but this time we're doing a god damned cinnamon roll. Recipe ([url=http://www.cookingclassy.com/2012/03/cinnamon-roll-mug-cake-made-in-3-minutes/]source[/url]): 2 Tbsp applesauce 1 Tbsp vegetable oil (sub more applesauce if needed) 1 Tbsp buttermilk (sub reg milk if needed) 1/4 tsp vanilla extract 1/4 cup + 1 Tbsp all-purpose flour 2 1/2 Tbsp packed light-brown sugar 3/4 tsp ground cinnamon 1 dash ground nutmeg (optional) 1/4 tsp baking powder 1/8 tsp (pinch) salt 1 Recipe Cream Cheese Icing, recipe follows Cream Cheese Icing 1 Tbsp Cream Cheese or Neufchatel Cheese, softened 2 Tbsp powdered sugar 1 tsp milk Directions Prepare Cream Cheese Icing according to directions listed, set aside. Combine all ingredients (minus Cream Cheese Icing) in a mug then whisk together with a fork until combine and nearly smooth. Microwave mixture on high power for 1 minute then check cake for doneness. If it is not fully cooked microwave for an additional 15 seconds. ** Serve warm topped with Cream Cheese Icing. ** I actually had to cook mine for 2 minutes. Varies with microwaves. Now, I didnt take any photos of me doing this because thats a lot of work at 3am. I did make this however, and it turned out like the brownie. A sponge-like cake in a mug. It actually tastes like a cinnamon roll though, you just have to adjust the cinnamon in the recipe (more). Doesnt take long, tastes like something out of the microwave. It looks like something homemade rather than something professional you'd get from a bakery like the one in the OP. It was a bit tough and a little on the dry side though but the icing helped. The applesauce I used (Pastor Chuck's Organic Applesauce) was a bit thick which might have had something to do with it. I also used dark brown sugar which wasn't very fine, it was kind of sticky in clumps which is why you see those dark brown spots of melted sugar in mine. Oh i love to do this when there nothing better around I use something like 1 egg, some flour, some oil, nesquik, some milk
