I preferably dont want to use ALL of the $350 but I'd like to get the most out of it that I can. Id also prefer NOT to have to deal with buying 2 GPUs and crossfire/sli them.
The rig will be used for gaming and video editing and I'd like it to max Battlefield BC2 and other recent/upcoming games.

I have the GTX 560 Ti (260$), runs BC2 max with 60+ fps just fine, or if you dont like NVidia, go for the Radeon 6950(also around 260$). Both cards are pretty similar.
You can find a GTX 570 on newegg for around 300.
which brand of the 570 do you think is best? and do you think its better than the 6970?

Most brands will do though, it depends on your preference.
If you pick a 570 without a custom cooler from MSI, EVGA or any brand the diffrences would be the warranty and little accessories.

As for the 6970, i have honestly no clue.
It will probally perform better on multi monitors compared to the 570. I can't say for sure.
MSI Twin Frozr has good cooling, good stock performance and good overclocking potential if you feel like it.
III if you can get it, otherwise II.
