Before I start, I'm on a Windows 7 laptop with Realtek High Definition Audio. I don't know what sort of onboard chip it uses, but the driver version is 6.0.1.6287.
I found a very old microphone from out back, and though I'd have some fun with it. Only problem is, it uses a 1/4 inch mono male. I have a converter, which converts to 3.5mm stereo male.
As expected, the right channel is just noise.
My question is, how can I affect the drivers so that it uses only the left channel of the microphone?

I think you need to find a 1/4" to 3.5mm converter that connects both the left and right audio channels to the single monaural channel of the mic, instead of just one of the channels.
You could also make one yourself pretty easily by getting a 1/4" female jack and wiring it up properly to a 3.5mm connector.
As for a software solution, you can break stereo tracks in Audacity and Goldwave and delete the undesirable track. You can then duplicate the remaining track and recombine both tracks into a new stereo track where both left and right are the same. Though this won't work if you're trying to do a video recording.
