So this what I'm on the verge of buying. The 16 of ram and i7 I would like to have as I'm going to be doing some rendering that could be quite intense.

I just have a couple of questions
Are these parts all compatible?
Is the power supply good enough for this rig?
Will I be able to do basic overclocking with this GPU cooler or should I bump it up a notch to liquid or something else?
Windows 8 or Windows 8 pro?
Also does anyone know of any good monitors that aren't too expensive but would compliment this system?
For your CPU Cooler, it's not entirely necessary to get the $70 cooler unless you're doing some heavy overclocking, the 212 EVO is decent, if you need a cooler at all. You could also stick with the stock cooler, but since you'll be doing some rendering, I'm sure the EVO should suit your needs, and if you do actually overclock like you say you are, your GPU cooler should handle it decently, as well as the EVO. You'll only need to upgrade your GPU cooler if you're doing some extreme overclocking.
Your power supply is nice, but you'll be able to get a decent power supply that's only 100 watts less and almost half the price. Such as: http://pcpartpicker.com/part/evga-power-supply-100b10600kr
As for the monitors, I'm not entirely sure if you want to use dual monitors (you should), but you'll be needing some monitors with HDMI and DVI.
Personally, this is what I'll be getting, as they're decently priced. They're only 21.5", but you can do some more digging around if you'd like.
Should I get windows 8 or windows 8 pro? Thanks for your help so far :)

There's no real reason to go pro for 8 besides with businesses now that the RAM cap has been raised.
Similar RAM for twenty dollars cheaper: http://pcpartpicker.com/part/pny-memory-md16384kd31600x9
If you never plan on getting another 780 Ti, you should get the above mentioned 600B PSU. Otherwise, if you want room for SLI, get this: http://pcpartpicker.com/part/seasonic-power-supply-ss850am
