I am about to acquire myself a GTX 680 of some kind. And since everybody know, Nvidia stock cooling, is worth shit.
So my initial plan was to buy, pretty much any stock GTX 680 of some kind, and put on an Accelero Twin Turbo II, since they just got the 680 Compatibility

I stuck with this for a while, until i kinda agreed with myself, it wasn't worth it. It would be really shit if something happened with card that wasn't my fault, because i would have ruined the warranty, mounting that cooler. So i trashed that idea.
I waited for some time, and now both Gigabyte and Gainward have released, what appears to be, properly cooled editions.

I myself have had a Gainward GTX 460 1gb for quite some time. I haven't had any significant problems with it ever. And what i like about gainward, is their software. It allows for fan control, which i really would like for a big fan system on a card.
So looking at the gainward, it carries only two fans, but again, allows for fan control.
Then looking at the Gigabyte, it has three fans, but what i've looked into, is that gigabyte have no additional software that allows for any kind of control on the cooling.

Have you read like... any... reviews on the 680 and cooling performance?
680s run fine on stock cooling. If noise is a concern then I could understand, though from most reports it's actually quite quiet. I'd go with stock, then consider the cooling for it. I would still recommend going for a stock PCB.
Phantom is awesome, I have one and it's really queit. 570 though, but still, same design.
That Gigabyte cooler is VERY noisy, speaking from personal experience (although that's with a 570).
I can control my HD 6850's fans with AMD's software
It's a gigabyte as well

Wouldn't be a bad choice at all.
I've got the Asus 680 and I've had no trouble with noise or heating.

I have a Gigabyte 470 with the same 3 fans and it's silent at ~60% speed. 90-100% is very loud.
My Gainward GTX275's two fans do no improvement on the cooling what so ever, but I've yet to have the graphics crash on me.
They've ruined an important part of the cooling, as they've locked the fan speed at 40% so it peaks 80c
