I run Eyefinity with a Single 6970, while framerates (usually) aren't a problem, I can tell you that the limited amount of games that utilize Eyefinity makes me question whether spending the extra few hundred dollars was worth it. In a lot of the games that do support it, it really isn't anything more than a novelty.
I'd say it's worth it for desktop use, having Chrome, a music player, and Steam all in large windows, sounds nice to me.
I personally like the idea of eyefinity, a single monitor offers you so much less in terms of view angles than you get in real life. Think about it, in real life you have damn near 180 degrees horizontal view angle and something in the region of 100 degrees vertical view angle, with a widescreen monitor you typically have 75 degrees horizontal. That is a massive loss of peripheral vision and I personally had a moment in Metro 2033 when rolling into Polis station where I could not bring myself to be awed by the sight because i could barely see any of it. Problem is it's not supported much and there is a significant price of entry, not only a third monitor but also a graphics card that won't choke and die. Although the idea greatly appeals to me i have to agree with poplot that at this moment in time it's little more than a novelty. A very expensive novelty.
Having built and used my own Eyefinity setup for several months, I say it isn't worth the expense. Poplot and chipset are quite right in calling it a novelty.
Perhaps the best way of way of putting it is this: If you have to ask, it isn't for you.
do you seriously want to spend the price of a whole new computer on two monitors that are literally only going to display your peripheral vision in the handful of games that support it
if yes, then go for it

You can actually find some nice deals for monitors if you look around, my two extra 22" displays were only around $300 total. The rest of your sentence, however, is true.
I have the computer its in my first post, I keen on getting it but would my crossfire 6950's be powerful enough to run that resolution well

You'd do well in most games with a 6950 CF setup. As the others here have said though, it's a lot more work for something that's more of a cool gimmick than anything actually usefull. You get the extra desktop area, but a lot of games don't have very good eyefinity support. You have to use FOV hacks and edit text files in a lot of games, even newer ones. Most of them have disfigured UIs (stretched, sometimes also cropped vertically), and those that don't usually don't have them centered to the main display. I also have performance issues in newer titles (single 5870, but you shouldn't have any problems).
That being said, when it finally works, it's pretty awesome.

I'd go for it just to have the extra desktop area. Having a second monitor makes an amazing difference in how I use my computer, I wouldn't have a problem with getting a third.
You should think of Eyefinity as just another bonus to getting three monitors.
