I wouldn't be surprised if they assume vegans are LGBT. If your only exposure to them is through something like tumblr it could be an easy mistake to make.

Vegetarians are one thing. Vegans are usually associated as being very anti-meat and they're the only ones you'll really hear about in media.
One is in moderation, the other is the extreme.

As someone that doesn't like veganism, sometimes they'll catch you off-guard. I haven't really met an uppity vegan in person.

Imho this is less about the Vegans and more that the cafe is probably often frequented by the left. Even moreso if the cafe takes part in the more left community.
It's just a stand in for something else.

Homophobic nationalists hold a rally a couple of days before the attack, after the same group had come through a month before looking for the LGBT community and foreigners, specifically targeting those groups. They targeted the cafe because it's a center for foreigners and LGBT people and they did it in the form of a bizarre provocation that turned into a brawl.
I live with a vegan. It's great more meat for the meat eaters.
One might say these assailants had links to the far right.
I am more surprised there is a New Zealand icon cafe styled name in Georgia.
Although I would be upset if I had came across it if I was in Georgia and found it was a vegan cafe, us Kiwis love our meat.
