It really depends, it can take quite a bit of a time depending on the amount of amendment the assembly and / or the senate disapprove of.
The governement also speed things up :
Usually, when the law is discussed in the senate, it takes a few weeks before it's sent to the assembly. The governement has the option of forcing them to respect a maximum delay. This is what happened.

It's been an electoral promise since last year and the current president is the first socialist to be elected since like three decades, so it's really the first thing the socialist party has put into motion when they arrived.

The reason they can't "remove the law" is because the law that has been voted is a "modifying law", it modifies another existing law.
Removing it would be like deleting the setup of a service pack after you installed it onto your copy of Windows (best analogy I could come up with haha)
Food for thought: removing death sentence was 363 / 117. So it was easier to abolish death sentence than let gays marry.

Abolition of the death penalty took way longer than gay marriage though. There were several attempts made around the 1910s but public opinion was widely against it. Things accelerated after May 68 and even though the death penalty was abolished in 1981, not a single execution had happened since 77. The last man to ever get the death penalty in France was also the last man to ever get his head cut off by a guillotine too. The more you know.
But yeah, death penalty was a debate for much longer than gay marriage. A good century before it was eventually abolished, Victor Hugo was already calling for its removal.

Nah, it actually adds a very important article to the civil code :
Art 143 Cciv : "Marriage is contracted by two persons of different sex or same sex"
Until then, there was no article giving a clear answer to this matter, a few articles mentionned a husband and a wife, those are modified to make sure the law is clear on the subject.
In theory, there was no legal basis against gay marriage in the past, the jurisprudence did the dirty work.
But yeah, either way, modifying back or removing the law is not possible.

That and adoption. It was technically possible for a homosexual couple to adopt but only one parent would actually be considered as such legally, and with the new law both will be considered legitimate parents.
