I don't believe that it's true that you could only save once originally. AFAIK it has always been three saves, and in looking it up to make sure I haven't seen a single reference to there only being one allowed save.

Dead Space 3 is the one with one life and you're dead, and it had even more cutscenes and opportunties to die instantly during a cinematic sequence than Dead Space 2 did.
