Basically it uses a lot of effects that creates a "wall of sound" usually consisting on distortion. The vocals are almost always muffled to the point where they practically blend into the background sound. They are often referred to as just one of the instruments in that case.

The song posted by yuck is mainly their only real shoegaze track, the rest of their stuff is awesome though.
Loveless is classic. Said to be the greatest shoegaze recorded but there's a lot out there.
