It may be overly ambitious, but it shows a goal to at least strive for being more than "just another average ship design"

id rather them try for a goal they cant reach and make something thats great, rather than just not caring and going for average.

Its motivation. They probably knew it was an impossible goal, but it gave the artists a bar to strive for and still make something awesome
The problem with the ship is not that the goal of being as memorable was too lofty, it's that a memorable design is a double-edged sword. Design wise it's a total success.
On the other hand it never had any onscreen moments that make it stick out in its own right. Nothing that gives it character. What would the x-wings and the Falcon be if not for the trench scenes, the kessel run story, the space slug, etc? Same with the snowspeeders. They were major story elements whereas the U-wing was just the ship they used to go from A to B for all I can remember.

Agreed. I look at the ship they ended up with and to me it seems like it could be a random Extended Universe ship. It seems very wasteful given the amount of effort and churn that the video portrayed.

They probably did the same with the B-Wing back in ROTJ, and it only showed up for a few seconds.
I like that it borrows design cues from the [url=http://starwars.wikia.com/wiki/T-47_airspeeder]T47[/url] they use on Hoth.

That's a part of design for movies sadly. There's always a lot of stuff that gets a lot of work put into it, and then it's barely ever on screen.
There's a bunch of this in the prequels, and if there's one thing you can't fault the prequels for it's all the fantastic designs done by the art and costume and prop departments.
Like, I love watching the behind the scenes footage for that stuff, and for episode 2 the costume designers were actually really disappointed that the female Tusken Raiders were only on screen for a few moments, even though they had put so much effort into the costumes.
It's an elongated Air speeder, with the engines from an X-Wing, and some long 'wings' on the front/side. I mean yeah, it works, but it's not going to outshine the older designs which were all completely unique.

Well the actual Jedi Starfighters and similar ships that got focus were less bland (and are honestly some of my favorites for the franchise). But the prequels are filled with a sort of golden age sci-fi renaissance that fades away into the familiar style we all know and love, so it makes sense at least.
Yeah, the PT was meant to be (mostly)and age of prosperity, then the Empire takes power and it goes down from there.
Droid tank is best tank.

I'm not super into this design but the prequel had a lot of SICK designs. The LAAT clone trooper ship, the Droid Control Ship, Grevious Rolly thing, even the pod racers were pretty cool.

It is a different era, designs change.
Plus, all we saw in the OT were military ships, rarely civilian ships., especially not royalty.

That was like the point though. It was contrasting the high, decadent society of the politicians, with the usual used, grimy stuff we see.
