Summer Overture is prolly the best, Lux Aeturn was brilliant. Also, the 28 Days/Weeks OSTs are both very very awesome.

I really liked the theme in Shawshank. That's probably just because I've seen it about 15 times though.

One of my favorites is Up's, as through out the movie, each character had a specific song, and as the movie progressed, the music would transform to the characters new maturity, insanity, or, and one of the saddest parts of the movie, emotional. A real good example is this; [media] [url]http://www.youtube.com/watch?v=93jxkqG0gWc[/url][/media] It is pretty much the same song, but played at loer notes, pitches, and on different instruments, to show emotion.
