I think his clutch is lower by his leg for some reason, probably because of the raised handle bars. So he is not just riding with one arm for the sake of it. You can see the camera man zoom in on at 1:28
Looks pretty dangerous, drag racing with just one hand.
That thing is pretty fast though, kind of caught me by surprise.

Yep, that's his clutch. The shifter is in the regular position by his left foot peg. I'm just guessing he didn't have a clutch cable long enough to work, or didn't want to deal with it.
Choppers always look so weird to me, I prefer bobbers.
