I know it's ethical for them to unknowingly eat pork but they still have a right to be mad and prevent it from happening again.

Being a prisoner doesn't mean the institution gets to lie to you and fuck with you, especially when it comes to diet. People can die if they don't eat the right things. Obviously that's not the case here, but think of the implications of what you're saying.
