Why is it that in most Zombie related fiction and media, that the word "Zombie" and the related movies and fiction that go with it are non-existent?
Because it's an offensive word towards zombies.
slur towards the undead
People will laugh at you if you say zombies are coming, but they'll run with fear if you call them by their PC name "The Undead".
They probably can't accept the fact that they're being overrun by, well.. zombies. If you're about to be ripped apart by something that you thought was fictional, you'd be looking for a rational explanation too.

Cue collective comments about how it's a slur.
Cheers.

Yeah, I mean you'd think that at least one survivor in a piece of Zed fiction would have played L4D or had watched Night of The Living Dead right?

You ever seen Shaun of the Dead? "We're not using the Z word!" They know what zombies are, but they can't come to terms with the fact that they exist.

Why you be looking for a rational explanation when you are getting eaten alive? I would just blurt out what ever comes to my head first.

Touche.
But there has to be some crazy college guy that is addicted to Nazi Zombies, and is a survivalist? Riiiiight?
Ed: Any zombies out there?
Shaun: Don't say that!
Ed: What?
Shaun: That!
Ed: What?
Shaun: That!! The "zed" word. Don't say it!
Ed: Why not?
Shaun: Because it's ridiculous!

Because the word "zombie" is considered passe and cliched in hollywood. "The infected" are all the rage now.
Personally I think that zombies should be a minor yet looming threat, the real threat should be other survivors and their greedy primal instincts.

Isn't infected use more in the context of 28 Days Later, when the zombies are still living humans basically infected with a disease that drives them to kill and infect any humans not infected?

Most movies with "zombies" use the excuse that it's a viral outbreak so technically they're still "infected".
It's mostly because in most zombie fiction, zombies do not exist in the characters' realities.

They're infected, which makes them zombies. Someone with leprosy is infected, but we still call them lepers.

Also, this. I think it's so stupid how often this is...it strips away a degree of believability. To craft an effective zombie apocalypse universe, one must connect to the survivors and identify with their struggle, as with any disaster movie, or any movie at all, really. Taking the idea of zombie movies and how easily someone would draw a parallel between the events of the movie and the pop culture figure, and tossing it out the window is essentially immersion breaking.
Because it opens more options for the plot if the survivors don't already know everything about zombies from the media.
I also like the classic explaination more. The vodoo explaination. Or maybe no explaination at all. They are just zombies.
Maybe Hell is just full.

This.
In "serious" zombie movies, zombie related media is nonexistent, and thus knowledge on how to kill them.
