Scientist Dave Hart, from the Institute of Food Research, says he can turn Roald Dahl’s eccentric gourmet gum invention into reality -- and luckily, without the unpleasant side effects!
Working with a team from the National Science & Engineering Competition he says nanotechnology can be used to encapsulate and release flavours in a precisely controlled way.
Hart and his team are currently experimenting with boiled sweets which have different flavour layers separated with a tasteless gelatine and contain a final desert taste at the centre, encapsulated in a high-tech gel called Gellan.
While he says a chewing gum might be a few years away, it he proclaims his boiled sweets a success -- and he hasn't even turned any children into blueberries, or so he says.
Speaking of his work, Hart said: "Wonka’s fantasy concoction has been nothing but a dream for millions of kids across the world.
"But science and technology is changing the future of food, and these nanoparticles may hold the answer to creating a three course gourmet gum.
"The mechanism exists but the technique and flavours need perfecting. In the meantime, I’m working on the idea of a boiled sweet version which uses a much older scientific technique.”[/quote]

It's a cool topic, but I really fail to see how the article is in any way 'five-star' journalism. They take a cursory look at the facts of the situation, and give the barest of time frames for its development. The article provides almost no background on what technology is being used to produce them, and what other potential applications this process has. There's a real lack of any depth in the article. I'd give it two, maybe three out of five.
