Runnin' Down A Dream
Depends how long your attention span is. If you're old and boring, throw in some Earth, Wind and Fire. Otherwise, follow your tastes.
The last time I went on a long drive, my girlfriend and I took turns putting on songs. I basically showed her the entire Rush discography and she showed me AFI's works up to 2002, with some other stuff in between. Four songs on, four songs off, rinse, repeat. That sort of engagement kept either of us from getting tired.
Other than that, I can't offer much advice. A lot of my music puts people to sleep. Just make sure you have a good mix of styles; if it's constantly loud, you'll tire your ears out, and if it's constantly quiet, your brain will shut off. Get fast stuff, slow stuff, angry stuff, soft stuff, mix it up.
I find Hanzel Und Gretyl's "Uber Alles" album to be good driving music.

I have to drive to the airport right now, but I'll recommend some better stuff when I get back.
My mom listens to Rust in Peace when she drives.
She's cool.

That is pretty cool.
Does she sing along to it, too?
That'd be awesome.
Myself, I just burn a bunch of tracks from my music library (shuffled) onto a few CDs, and just throw them in my vehicle's music player. It's an MP3 player, so I can fit about 180-200 songs on a single CD. It's pretty nice.

Well, she started listening to it a couple of months ago because she's taking us to see Megadeth next week, and she wanted to get used to it. She enjoys it but she doesn't know the songs quite well.
But today she was singing along to the end part of Take no Prisoners.
Typically in my car WAS my entire music library. I had an MP3 jack for my stereo.
But if that's not feasable, I drove to alot of assorted rock, metal, and electronic music most often.
Dream Theater, Metallica, Iron Maiden, Nightwish, Kamelot, Lamb of God, Nine Inch Nails, Megadeth, Queen, Pink Floyd, Deadmau5, Daft Punk, etc...
