I wish there was a game where you could explore the galaxy, land on a planet and explore that planet on foot and or in a ground vehicle.

Kerbal Space Program comes close. It may only have a single solar system right now but you can land on every body save the gas giant and star, and you can roam around on foot. Rover mods also exist for driving around on these bodies too.
