I was taught a lot of concepts like that in my color theory course in college. It's also not at all because you expect red, it's purely how we process color relationships. This is very useful for styles where you don't actually paint with the perceived color, and why you rarely wanna use pure grey (tiny amounts of color do a [I]lot[/I]).
You can also do stuff like get two opposing colors, make them really bright and contrasty, and paint them side-by-side with a sharp edge. That harsh edge becomes very difficult to perceive correctly, and you see it a lot like these optical illusions that dance:

if you take a small cutout of the "red", crop it, and stare at it by itself for a few seconds you can watch it become grey before your eyes

I wish they went more into how your rods and cones perceive light and convert light energy into chemical/electrical energy for your brain to process. I took a couple neuropsychology/sensation and perception classes at university and I was absolutely amazed by how the body works on a microscopic level to create vision.
This channel has more videos on how cells in the eye and brain perceive light and convert it into brain signals.

What's interesting is that if you take your hand and cover up the strawberries you actually will see the triangle as one color, but when you remove your hand it returns to looking like a different color.

My life goal is to see the dress in person.
the dress will look normal in person as your visual system automatically white balances, unlike the cameras in both examples which are fixed at a specific color temperature.
