I would bet that when you reach 8 folds the paper is subjected to stresses greater than its tensile strength, so it will rip. Its not a matter of the force required to fold the paper, its that the paper is simply not strong enough to fold 8 times. When you fold something the outer surface has to cover a greater distance than the inside, and I can imagine that depending on how you fold it that surface has to stretch more and more.
Didn't mythbusters bust this myth? Sure, they used a paper big as a hangar but I think they managed to get like 9 folds.
I always thought this myth is only for a normal letter-sized piece of paper. The length the paper can stretch without breaking is dependent on its length, so it wont hold true for large sheets of paper.
