I have a few.
-Lord Of The Rings: The FellowShip Of The Ring: Extended Edition- Actors
-Jackass: Number Two
-Step Brothers
-Tenacious D: The Pick Of Destiny
-Monty Python and the Holy Grail
Shaun of the Dead and Hot Fuzz have good ones.
I love the commentary on School of Rock by the kids in the movie =D
I neve3r really tried listening to commentary. The thought of watching the entire movie over again while a couple people are chatting kinda ruins it for me, but I'd like to be convinced otherwise.

Try it with a comedy.
Tropic Thunder is one I forgot to add up in the OP, but I don't know how I could forget that one, Robert Downey Jr was in character the entire time!
Easily The Empire Strikes Back by a couple of kilometers. Irvin Kershner's voice is amazing. And he has so much fun just talking about the production. He turns everything into a fun little story, and he wraps it all up beautifully in the end as if he had just finished reading a long book to you after tucking you in. :3
I'm sure the movie wouldn't have been much worse off if it had just been Kershner reading the script aloud.
Did I mention I really like his voice?
A second place would be, hmm... Episode III actually. Because while the movie itself isn't much to write home about, the commentary somehow turns it into a better movie. All of the other commentaries George never says anything interesting because he doesn't want to spoil the plot. But this one he is finally free to say what is on his mind. And then you get to see the movie he wanted to make, rather than the movie it became.
And it's a good movie he wanted to make.
Fight Club and Shaun of The Dead. They have the best commentaries I've ever heard.
Used Cars.
Shaun Of The Dead.
The remake of Night Of the Living Dead with Tom Savini.
Castaway.
Ed Byrne's first stand up DVD had an odd commentary, it was his brother and a few of his friends (all other comedians, save for his brother) insulting Ed Byrne and judging his comedy.
I've enjoyed all the Red vs Blue commentaries. And yes, I owned the DVD's.
Battlefield Earth
Most of the commentary was everyone apologizing for making such a terrible film
Resident Evil and Resident Evil Apocalypse.
Full Metal Jacket. Mostly because it's the only commentary I really remember.

That sounds great!
Wonder if it's the same for "Batman and Robin"...
I've heard every commentary for Futurama. They're funny. One Commentary, I don't remember what episode Billy West did it in Character as Zoidberg, and one where Billy and John DiMaggio did a little bit ias Fry and Bender respectively.
apparently there is a commentary out for "Road to Rhode Island" With Seth Mcfarland doing the whole thing as Stewie and Brian
So far only Step Brothers and Defendor
Finding Nemo, Aladdin, The Incredibles, and Star Wars: The Empire Strikes Back
I dunno. I like learning about how they did the animation, and Star Wars has a few interesting stories about production.
Ali G Indahouse was actually pretty funny, as Sacha Baron Cohen and Martin Freeman stay in character so you get all the facts you usually get within a sort of voiceover sketch.
Anything where Simon Pegg/Edgar Wright are commentating, it's epic.
Spaced
Shaun of The Dead
Hot Fuzz
Lord of The Rings
Billy conolly in boondock saints. He talks about literally anything that comes to mind. He also says that david della rocc has a smile that brightens anybodys day. Which is a fact of life.

yeah, I have to go with this. Tropic Thunder is the only movie I'll ever watch twice in a row. the first time without commentary then again with it. it's so worth it.
Some of the older Simpsons commentaries are hilarious.

Tropic Thunders commentary was pretty awesome.
Downey didn't come out of character till he done the DVD commentary :clint:
