Of course they could, but I'd rather have black, chrome sleek bionic hands rather than some badly faked skin.

In the video, it's made apparent that the hand only senses the movement of her tendons. It isn't actually connected to anything. That would make compacting the hand into a few fingers pretty difficult, and not to mention expensive.
