Probably a combination of both.
I'd imagine they'd need a human to take a bunch of the advertising pictures for the video because honestly, who would want to watch an ad full of dog's asses, piles of shit, and food spilled on the floor?

Heart rate acceleration isn't just caused by excitation, if the dog decided to run all of a sudden or jump the camera would take a photo

To me it can sorta look like a man with a dog on the reflection, especially considering the dog in the video was black and white. I can definitely see something between the guy's legs, below his hands. Might be him petting the dog to encourage the shot.
This just seems like a really weird thing to fake.

I guess that's what being a pho-dographer actually means.
You grab a dog with a built in camera and takes photos with it super simple.
The pictures are way too sharp for a camera that shakes like crazy on a dog. Neat idea though.
Anyway, this whole thing is nonsense simply because even if the heart camera magical selective photo taking worked, 90% of what you gonna get will be blurred crap because guess what, dog's heartbeat also rises when it MOVES. Because of that, you will spend ridiculous amount of time weeding out the few okay pictures yourself, anyway.
SO, why bullshit around with a camera holder mashed together with a heartbeat sensor, and not just attach a GoPro to the dog in same manner and attach the heartbeat sensor separately, so you can sit with the video (which will probably at least be much easier to make sense of than series of horribly blurred photos), and if you want to pretend the heartbeat nonsense actually means something, you can just look at the saved graph of heartbeat, line it up with the video, and pick the snapshots, yourself.
This is just a massive gimmick by principle, even if it worked and there's zero point to it. Since they obviously lied about the photos they showcased, they can crash and burn for all I care.

It's kinda saddening to see this because it's just Nikon struggling to keep their compact camera market a thing as they watch it to run dry and disappear because 90% of people who would have bought a compact just have a phone with [I]good enough[/I] camera today.

Well, my dog used to get excited at the sight of any stationary car, because in his mind it meant it was time to mount up and go somewhere for a walk.
I can picture my dog taking pictures of his food bowl non-stop :Y
