There are a lot of ways of making mayonnaise at home, personally my favorite ways is:
-Take 2-3 egg yolks and start beating.
-Slowly add oil until you get a creamy consistency (200-300 ml)
-Add mustard(optional) and a little vinegar, while constantly stirring, whisking
-Season well (salt, pepper) and maybe even some chili flakes.
It is much better than store bought mayonnaise because it has very little artificial preservatives.it should be edible for 3-5 days.

Well I just sploodge in a jar but that works too.
Nice variation, a nice tip if the Mayo gets thicker than you'd like is to just add some water until consistency is to your satisfaction

I like preservatives in my food so it keeps longer.
