I think I remember they had a process that allows them make an episode very quickly.
I believe there's also a documentary called "6 Days to air" which even explains the process.

They did skip last week's episode, so it could be possible they spent that time writing [i]three halves[/i] of an episode.
I think the same thing happened with the 2008 election, they were able to animate and finish the episode within 24 hours of the election result.

Their animation pipeline allows them to roll out new episodes on very short notice. It's around six days to make an episode from start to finish, so they probably wrote up multiple episodes based around the election results and got them 1/3rd of the way complete, and then finished up whichever one they wrote for what actually ended up happening.
